A compost heap is a container of hungry microbes, and almost every problem people have with one comes down to feeding them badly. Too much wet kitchen waste and they suffocate, which is what a slimy, sour-smelling bin actually is. Too much dry material and they starve, which is why a pile of autumn leaves can sit unchanged for two years.
Nothing here requires a large garden, a hot heap or a thermometer. The aim is a bin that quietly turns peelings and cardboard into something you can put on a flower bed or a window box, without smelling, without attracting rats, and without becoming another chore you resent.
Greens and browns, and the ratio that matters
Compost inputs come in two groups. Greens are nitrogen-rich and usually wet: fruit and vegetable scraps, coffee grounds, tea leaves, fresh grass clippings, plant trimmings. Browns are carbon-rich and dry: cardboard, paper, dead leaves, straw, wood chips, sawdust from untreated timber. The names mislead, since coffee grounds are brown and count as a green, so remember it as wet and recently alive versus dry and dead.
The balance the microbes want is a carbon-to-nitrogen ratio that works out in practice at roughly two to three parts browns to one part greens by volume. Volume, not weight, which matters because a bag of leaves is enormous and weighs almost nothing. In everyday terms: every time you tip in a caddy of kitchen scraps, add about two caddies of torn cardboard or dry leaves on top.
Nobody measures this precisely and you should not either. The reason to know the ratio is that it tells you which way to correct, and the answer is nearly always more browns. Almost every failing home compost bin is short of carbon, because kitchen waste arrives daily and cardboard has to be added deliberately.
Keep a supply of browns next to the bin at all times. A sack of leaves collected in autumn lasts most households a year. Failing that, flattened cardboard torn into hand-sized pieces is permanently available; remove plastic tape and heavy printed labels first.
Choosing a bin
The container matters less than most beginners assume, but it should match your space and how much material you produce.
An open heap or wooden bay: cheapest and best aerated, needs space, looks like what it is. Good for gardens producing a lot of leaves and prunings.
A closed plastic bin, the tapered kind with a lid and a hatch at the base: the default for a normal garden. Retains warmth and moisture and is far less inviting to animals. Sit it on soil so worms can get in.
A tumbler: a sealed drum on a frame. Fast, tidy, rodent-proof and easy on the back, but small, so it needs a second container while the first finishes.
A wormery: stacked trays of composting worms that process kitchen waste. Works indoors and on balconies, and produces compost plus a liquid feed.
A bokashi bucket: an airtight bin where waste is fermented rather than composted. Handles cooked food, meat and dairy, but the output is pickled, not finished, and must then be buried in soil or added to a compost bin.
One useful rule: bigger heaps work better, because a larger mass retains its own heat and heat speeds everything up. A heap around a cubic metre can get genuinely hot; a small bin still composts, just slowly and at ambient temperature. Slow is fine. It means months rather than weeks.
What genuinely cannot go in a home bin
Industrial composting reaches temperatures a garden bin never will, which is why some things are fine at a municipal facility and a bad idea at home. The home exclusion list is short and worth following exactly.
Meat, fish and bones. They rot rather than compost at garden temperatures, smell strongly, and are the most reliable way to attract rats and foxes.
Dairy of any kind, for the same reasons.
Cooking oils, fats and greasy leftovers, which coat material, block the airflow microbes need, and draw vermin.
Dog and cat waste, and cat litter, which can carry parasites a home heap will not reliably destroy, making the compost unsafe for food growing.
Glossy, laminated or heavily printed paper, including magazines and receipts. Coatings do not break down, and thermal receipt paper carries chemicals you do not want in soil.
Diseased plant material, persistent weeds such as bindweed or couch grass, and anything gone to seed, since a cold heap will not kill them.
Coal and barbecue ash, and treated or painted wood and its sawdust.
Anything labelled compostable or biodegradable plastic, unless it explicitly says home compostable. Most is certified for industrial facilities only and will still be recognisable a year later.
A few borderline items. Citrus peel and onion skins are fine in ordinary compost in moderation, but keep them out of a wormery. Eggshells break down very slowly unless crushed. Wood ash from untreated wood is fine in small amounts. Tea bags and coffee pods often contain plastic, so check the packaging.
Building and running the heap
Start with a coarse layer at the bottom, such as twigs or scrunched cardboard, to let air in from below. Then alternate: greens go in, browns go on top at two to three times the volume. Chop or tear larger material, because surface area is what the microbes work on and a whole cabbage stem can take a year.
Two conditions need attention. Moisture should feel like a wrung-out sponge, damp but not dripping; if water runs out when you squeeze a handful, add browns and turn it. If it is dusty and nothing is happening, add water as you add browns. Air is the other, which is what turning provides, though pushing a stick or an aerator down into the heap gets much of the benefit for far less work.
Timing depends on method and season. A cold, untended bin typically takes six months to a year; a well-balanced heap turned regularly can finish in a couple of months in summer. Everything slows in winter, which is normal. It is done when it is dark brown, crumbly, smells of woodland floor, and you cannot identify what went in.
What goes wrong
It smells of ammonia
A sharp, urine-like smell means too much nitrogen, which is too many greens, and it usually follows a large quantity of grass clippings. Add a generous volume of browns, mix them through, and the smell should go within days. Grass in bulk is the most common single cause of compost problems, because it is very wet and mats into airless layers, so add it thinly with cardboard between, or leave it on the lawn.
It smells rotten or sour
A rotten-egg or sour smell means the heap has gone anaerobic: too wet, too compacted, no oxygen. Turn it thoroughly, work in dry browns, and cover it if rain is getting in. If the bottom is wet sludge, dig it out, mix it with cardboard and rebuild. A healthy heap smells earthy and mild, and when yours does not, air is the missing ingredient.
Rats, mice or foxes
This is the fear that stops most people starting, and it is largely preventable. Rodents want food and a warm dry nest. Keep meat, fish, dairy and cooked food out entirely, bury fresh kitchen waste in the middle of the heap rather than leaving it on the surface, and keep the contents damp, since a dry heap makes attractive nesting material. If it persists, move to a closed bin or tumbler. Composting does not cause rats; exposed food waste does.
Flies and small insects
Clouds of fruit flies mean exposed fruit waste; cover every addition with browns and they will go. Springtails, woodlice, beetles and worms are supposed to be there. Maggots outdoors usually mean something meaty or greasy got in.
Nothing is happening at all
Check moisture first, since a dry heap simply stops. Then the mix, since nothing but leaves and cardboard has no nitrogen to work with. Then particle size. Finally volume, since a small amount of material in a large bin will never build heat.
The heap that never gets used
The quiet failure mode is a bin that fills completely with nowhere for the contents to go, so the household stops adding and reverts to the general waste bin. Plan for it: either a second bin so one can finish while the other fills, or a bin with a hatch at the base.
Composting with no garden
A flat with no outdoor space at all can still divert most of its food waste, and the options are genuinely practical rather than token.
A wormery is the most complete answer. It uses composting worms, the red-brown surface-dwelling kind sold for the purpose, not earthworms from the garden, which will not survive. It fits under a sink, on a balcony or in a cupboard, and a well-run one has no smell, because the worms process waste before it can rot. Feed small amounts, keep it damp, add shredded cardboard regularly, keep it out of frost and extreme heat, and avoid citrus, onion and salty food in quantity.
A bokashi bucket ferments waste with a bran inoculant in an airtight bin. It accepts cooked food and small amounts of meat and dairy, which nothing else here does, and does not smell when closed. The catch is that fermented waste is not finished compost: it has to be buried in soil or added to a garden bin, which needs arranging before you start.
Many local authorities run food waste collections, the lowest-effort route, and they process material no home system handles safely. Community gardens often accept contributions too. If you use either, keep a lidded caddy in the freezer, which eliminates smell and flies between trips.
Renters can do any of this without modification, since a wormery, bokashi bucket or freezer caddy leaves no trace. With a balcony, check building rules before buying a large bin, and remember a balcony gets far hotter and colder than the ground.
Using what you make
Home compost is a soil improver rather than a potting compost. Dug into beds or spread as a mulch a few centimetres deep, it improves structure, holds moisture and feeds soil life. For containers and window boxes, mix it with potting medium rather than using it neat, since alone it can hold too much water and compact.
Start with a bin, a caddy on the kitchen counter and a sack of cardboard beside it. The rest is a fortnightly habit of adding browns and occasionally poking the heap with a stick.
